Pork sausages with fig and pomegranate salad recipe

Ingredients

  • 6 Thick pork sausages
  • 3 Fresh figs
  • 2 cups Baby rocket leaves
  • 2 tbsp Toasted pine nuts
  • 100g Feta (danish)
  • 1/4 cup Pomegranate seeds
  • Olive oil
  • Balsamic vinegar

Directions

Step 1/6

Preheat a non stick fry pan to a moderate heat, spray with cooking oil

Step 2/6

Cook sausages for 12-15 minutes until golden and caramelized.

Step 3/6

Cut figs into small wedge segments

Step 4/6

Combine rocket leaves, cooked sausages and figs in a serving dish

Step 5/6

Crumble over the feta and toasted pine nuts

Step 6/6

Garnish with pomegranate seeds and dress with a drizzle of extra virgin olive oil and balsamic vinegar.
