4 lean pork rump or leg steaks, thick cut
Juice and rind of 1 lemon
1 tbsp olive oil
1 tbsp Dijon mustard or wholegrain mustard
Salt and pepper to taste
Apple sauce, tin or jar or freshly prepared, to serve
Preheat frying pan, barbecue or grill for a short time on medium.
Combine lemon juice and rind, olive oil, mustard and seasoning in a glass bowl and mix well. Coat the steaks with marinade on both sides.
Panfry, barbecue or grill pork steaks for 2–3 mins each side (or until cooked the way you like it).
Serve hot with apple sauce and salad or steamed vegetables.
Don’t overdo the cooking. Nowadays we know it’s okay to cook pork on medium for just a few minutes each side.
